- You must register your food preparation premises with the local Environmental Health Office – that’s the EH department local to the area where your unit is stored if you’re a mobile caterer – at least 28 days prior to trading.

- You must create and consistently use a documented food safety management system based on HACCP principles. HACCP is very important, you can learn all about it with this training course.
