What does the law say?

There are a few very important pieces of legislation that cover food hygiene regulations, like the Food Safety Act (1990) and the Food Law Code of Practice (2012).   1. You must register your food preparation premises with the local Environmental Health Office – that’s the EH department local to the area where your unit is stored if you’re a mobile caterer – at least 28 days prior to trading.

  3. You must create and consistently use a documented food safety management system based on HACCP principles. HACCP is very important, you can learn all about it with this training course.
